Boats of Paradise

Belgian endive boats generously filled with organic, all natural hummus & topped with toasted nuts, diced roasted red  peppers, micro amaranth, and aged balsamic vinegar reduction. 

G's Pacho

Chilled tomato tangerine soup with basil infused extra virgin olive oil,  chocolate fig balsamic vinegar, toasted Julienne basil and crushed  toasted macadamia nut 

The Artisan Cow

Jones Creek prime aged beef short ribs marinated in farm fresh garlic, lemon thyme, extra virgin olive oil, Redmond Real Salt and freshly cracked pepper. Wood fire grilled and slow-slow-slow roasted in bone broth and secret spices until…. you guessed it, the meat falls clean off the bone. Finished with our signature Tomato Cherry Port Demi-glace 

Organic Crab Won-ton

Organic brown rice won-ton filled with ground organic ​never frozen  chicken, Dungeness crab, organic diced fresh  mango, and turmeric, lightly fried in coconut oil and topped with  toasted sesame seeds. Paired with Conundrum coulis (mango and  champagne puree)

HOME ON THE RANGE

Never frozen, grilled, roast free-range chicken breast, grass-fed and  grass-finished prime aged beef sirloin steak. Severed with roasted garlic  mashed potatoes with chives, parsley, and farm butter, fire roasted  seasons best vegetables. Twice risen artisan rolls. Beverage service  client choice.  

PRAWN AND MIGNON

Char-grilled jumbo tiger prawn, grass-fed and grass-finished dry aged  filet mignonette and Cara-Cara chervil cream. Served with grilled asparagus  with thin sliced garlic and extra virgin olive oil, and a roasted cauliflower  puree. Beverage service client choice. 

CHOP HOUSE

Smoked seared organic lamb loin chops with mandarin lime garlic  rosemary demi-glace (brown sauce). Served with savory quinoa, brown  rice, stuffed heirloom tomato, Haricot Vert (green beans with garlic and  Parmesan) and lemon sorbet. Beverage service client choice.  Recommend beer and wine. 

MY ITALY

Tomato tangerine soup (served chilled or warm), wild mushroom and  fresh ricotta ravioli with Meyer lemon sage browned butter. Served with  lemon sorrel and grilled arugula salad and Parmigiano Reggiano crisp.  Beverage service includes Pellegrino sparkling water, non-alcoholic  wine spritzers, and organic cranberry raspberry juice

DROPPED FROM HEAVEN

Our robust confections take it personally when you call them "cake bites". These belles of the ball make no excuses for their noticeably rotund appearance. We don't select the weight and size of the individual drops....that would be interfering with intervention :)

THE CHOCOLATE FORK

What respectable caterer would open their doors without a great chocolate cake in the oven? We made sure it wasn't us so come and get it while it's warm! Local artisan select roast chocolates blended with almond, coconut and oat flours, farm fresh eggs, local honey and local cream. 

ALMOND MACADAMIA CRUSTED FRESH FRUIT TART with MORNING HARVEST APRICOT GLAZE  

Let's start with this crust okay? This beauty is a six part series of mixing, folding & chilling. Once the dough has reached the perfect temperature, we do our best not to eat it raw and eventually lay over generously buttered tart pans, top with more toasted chopped macadamia nuts and bake to a light-golden brown. Can you practically smell it?

THE ARTISAN CREAMERY

Often imitated but never duplicated, our single batch single origin cream comes from our very own cows that we milk with our very  own hands! Incredible quality with one of a kind flavors your mouth will never forget. Just try to resist our; Toasted Marshmallow Pistachio Chevre or try saying no to the Sour Cherry Sweet Biscuit Bourbon Bonnet. Still holding out....well say hello to our Milk Chocolate Smoked Strawberry Lavender with Avocado Honey. Dessert game over!
